Just Blueberries and Lemon Energy Bites
Makes 16-20
¾ cup old-fashioned rolled oats
4 pitted Medjool dates
¼ cup toasted slivered almonds
¼ cup sunflower seeds
½ cup almond butter, chunky or smooth
2 teaspoons lemon zest
6 tablespoons fresh squeezed lemon juice
2 teaspoons honey
1/4 teaspoon salt
1. Combine oats, Just Blueberries, dates, almonds, and sunflower seeds in a food processor; process until all ingredients are ground to the same consistency, 1-2 minutes.
2. Combine almond butter, lemon zest, lemon juice, and honey in a small bowl until smooth, add to the mixture in the food processor and process all together until a thick paste forms, another 1-2 minutes.
3. Line a baking sheet with parchment, waxed paper, or aluminum foil. Using clean hands, scoop out approximately a tablespoon of the mixture and roll into 1 ½” balls, for a total of 16-20 bites (this will vary a bit depending on the size rolled). Refrigerate, uncovered, 20 minutes until firm.
4. Bites can be stored in the refrigerator in a covered container for up to one week.
